The luxuriance of pastry cream is heavenly. The amazing blend of egg yolks, corn starch, milk, cream, and sweetness is just the right snack for your craves. While there lies a number of tricks and tips to make a really succulent tart, the path doesn’t seem too crammed with sweat. Just the right amount of ingredients are important to rule the recipe. Nevertheless, to make this beetroot, mango, chocolate, and cream cheese tart recipe, it was one incredible experience. 

At one moment, I would plan to mix the mango and cream cheese, while on the other, I would wonder how a combination of chocolate and mango would taste like.

But you will gladly love this creamy fruit tart recipe- whether for munching or to round up as a dinner dessert.

Making an authentic French Tart Recipe 

A tart is usually a baked recipe, consisting of a crumbly firm pastry shell with a sweet, savory, or fruity base. Nonetheless, for a French fruit tart recipe, the 4 essential ingredients include:

  • A sweet pastry crust
  • The vanilla pastry cream filling
  • Fresh fruits
  • A tart glaze

Seemingly, most French tart recipes call for berries and fruits on top. I preferred to play the fruit inside. 

Drawing everything from scratch is arduous and time-consuming, but it is worth the results. However, for an impatient person like me, things can often spill over. Luckily, I rescued the dessert from falling apart.

I was literally out of my mind (and body) when all at once, I decided to bake this tart. Not out of a great mood but out of frustration.

I set the gelatin to bloom and began curdling the milk. It was the creamiest of cream cheese that I had ever tasted. Even my chocolate ganache was ready. Sigh!

I was almost ready with my fillings when I realized I hadn’t even set the pastry dough.

I opened the cupboard to reach for the Marie biscuit packet. And wow! My biscuit tart shell turned out as an absolute complement to the incredible layers of sweetness.

Making of the crust and filling

This tart cake is the summary of a rich, creamy, chocolaty, and nutty taste at one bite. Like a classic French chocolate tart, it has the lusciousness of chocolate, graced by the tanginess of mango, and at the same time, the sublime flavor and silkiness of cream cheese. Just the right recipe to appease all moods.

For the tart base (or shortcrust), I used a packet of Marie biscuits. You can use any biscuits.

For the filling, I used three layers of cream cheese, mango, and beetroot and white chocolate base. This fresh fruit tart is the ultimate beauty you will ever make.

Equipment

  • Tart mould
  • Heating pan
  • Food processor
  • Glass bowl

Materials

For the tart crust/ shell

  • 1 packet Marie Biscuit You can opt for coconut or digestive biscuits also
  • 1 whole Egg
  • 3-4 tbsp Butter
  • 3 tbsp Sugar

For the filling

  • 1 cup Cream cheese
  • 1 tsp Vanilla essence
  • 2-3 Ripe Mangoes I took the small variety of mangoes
  • 5 grams White chocolate
  • 1 Beetroot
  • 2 tbsp Gelatin
  • 2 tbsp Melted butter
  • 1 tsp Corn starch

Instructions

  • Grind the biscuits to a fine powder 
  • Add the egg and the melted butter. Mix thoroughly.
  • Add the granulated sugar and mix again
  • Spread into a tart mould and press the ends firmly.
  • Bake at 180 degrees for 20 minutes
  • Remove from the oven and brush the shell with egg wash
  • Put it back in the oven for another five minutes

Layer 1- Cream Cheese Filling

  • Add the cream cheese, vanilla essence, and sugar in a bowl and beat it until the sugar completely dissolves with the cheese. Keep aside.

Layer 2- Mango Filling

  • For the mango pastry cream, add the mango cubes into a blender and make a fine smooth pulp.

Layer 3- Beetroot and white chocolate filling

  • Add 5 tbsp water to the 2 tbsp gelatin. Set aside for 10-15 minutes.
  • Grind or grate the beetroot and extract the juice using a sieve. Keep in a separate bowl.
  • Add a tsp of corn starch to half a cup of water, and stir. 
  • On medium heat, pour the mixture into a pan.
  • Now pour the bloomed gelatin into the corn starch mixture.
  • Add the vanilla and the beetroot extract. Bring it to boil. Sieve and keep aside. 
  • In another pan, heat water and place the white chocolate and butter on a glass bowl to melt.
  • Now fold the melted chocolate into beetroot extract.

For the assembly

  • Add the cream cheese layer in the cooled tart mold. Spread it evenly using a spatula. Bake for 15 minutes at 180 degrees.
  • Pour the second layer of mango pulp once the first filling cools. Let it set for five minutes in the fridge.
  • Now add the beetroot and chocolate layer. 
  • Refrigerate for 4-5 hours.

A good balance of a mango cheesecake and a French chocolate tart, this fruit tart contis is an amazing pick for all your dessert choices.

One of the biggest challenges the lockdown has endured is massive unemployment, which subsequently means reduced demand, supply, and consumption, thereby leading to slash in production and investment and a shrunk economy. Released data from the US Bureau of Labor Statistics highlighted that the unemployment rate has skyrocketed to 14.7 percent last month – the highest since the Great Depression.

Navigating the economic fallout- job loss, mental health condition, and more

There is no clear picture of a “normal life” in the horizon or how a “new normal” life will look like. Substantial job loss, looming mental health issues, inflated assets, healthcare deficiencies, are already murking the world with its ugly strain. With all these issues that every country is grappling with, analyzing the economic fallout caused by the pandemic will be massive and prolonged.

Aside this, the world economy is predicted to lose about $8.5 trillion output in the next two years. The pandemic is likely to expunge almost all gains of the previous four years, a study highlighted. This will subsequently push millions of people to extreme poverty by the end of 2020. A scientific report underlined that the disease could last for 18-24 months and will keep rolling until 60-70 percent of the human population is immune to the virus. This forecast may sound bleak but the only hope that exists amid this crisis is community resiliency to rebuild the neighborhoods, cities, and then the country at large. 

Rebuilding the post COVID-19 economy through sustainability

Fancy promises or believing in magic will not help in reviving the losses, rather, a sharp, flawless, and a long-term plan will diffuse the challenges and hurdles standing on the forefront.

Needless to mention, the post covid world will be distinct from the present setting. The “new normal” should focus primarily on building a better backbone to support such startling occurrences. A fundamental theme that we need to learn is to prepare ourselves physically, economically, and mentally to confront such a crisis. 

This pandemic is not the last one to affect humankind. There are several warning signs impending unprecedented economic disasters such as climate change, future virus outbreaks, biological warfare, and so forth. 

While an overwhelming recession is evident in most countries, it is also imperative to note that advanced sustainable goals and resilient societies are crucial to impede future catastrophe. To rebuild the lost economy, government and policy makers should build progressive economies, one that is clear, strong, and contains a long term sustainable plan. The strategy should focus on improving the past track records.

Focusing on the 2030 agenda for sustainable development can turn out to be a great action plan to strengthen universal prosperity and reduce extreme poverty. Besides, countries should strengthen the public health system, i.e., more affordable and accessible basic public health along with investment in education and skill development for the driving forces of the country.

Easy way to make watermelon halwa

The arrival of Bihu always fascinates me. Likely because I love seeing my mother prepare 100s of til pitha (a kind of traditional rice cake made with sesame and sugar), tel pitha (a traditional rice cake), and narikol laru (coconut balls). I would wait for her until late midnight, watch her prepare the delicacies wholeheartedly. I was always attracted to her way of preparing the coconut balls. She teaches me how delicately I must handle the preparation, a slight mistake and the balls would not take its desired shape. I would listen and watch her patiently, as she molds the balls. And apparently, I have applied a similar method while making this pudding. This is easy to make dessert recipe and consumes less time to prepare.

While I use to throw away the rind of watermelon every time, I choose to prepare something out of the inutile pieces (these were supposed to go right into the bin). After grinding to a good paste, I had decided to cook it the way my mother used to prepare the coconut balls, i.e., pour the mush directly to the pan and stir until the water dries up. After that, you can gradually add the other ingredients.

Here, I have also used some leftover red mesh of the watermelon that I had used for juice. You can skip that completely. Subsequently, I also made a few watermelon rind balls the next day. For making that, I applied a similar method of evaporating the excess water and adding a cup of roasted semolina. The rest of the steps remains the same apart from adding the liquid milk.

Watermelon Halwa Recipe

This is an easy to make watermelon halwa that is filled with nutrition and goodness of mik and nuts.

Equipment

  • Saucepan
  • Food Processor/ Grinder

Materials

  • 2 tbsp Vegetable oil, ghee, or butter
  • 1/2 piece Cubes of watermelon shell the inside green shell
  • 1 cup Nuts, raisin, berries of your choice
  • 1 piece Cardamom
  • 3 tbsp Powdered Milk
  • 1 cup Milk
  • 1/2 cup Sugar
  • 1 pinch Salt

Instructions

  • Peel off the outer green layer of the watermelon (You can use the inside red part for juices or other purposes)
  • Cut it into small cubes and add the pieces in a grinder.
  • Heat a pan and put the grinded paste to the pan and keep stiring.
  • Make sure to stir frequently, until the water dries up.
  • Now add the powdered milk and crushed cardamom.
  • Mix thoroughly so that no lumps are formed.
  • Now add the sugar and salt and blend it until the water evaporates.
  • Add the milk and crushed nuts and stir evenly.
  • Add the ghee or butter
  • Voila! Your watermelon halwa is ready. Serve hot with sprinkled nuts or seeds.

Make sure you cook the recipe in medium to low flame

    Whether you need a nice, calming place to work or a creative background for a photoshoot, these following cafes are absolutely great! I rated each workspace out of five and pricing, with $ being the lowest to $$$ as most expensive.

    Mr. Mustache Tea and Dessert – 110-6125 Sussex Ave, Burnaby

    Workspace: 5/5 – usually a tranquil space, however, it can get crowded on weekends! Bright, aesthetic, and roomy. 

    Prices: $$ – medium pricing, however, in my opinion, the design in the cakes and the workspace is worth the pricing. This cafe has cute sweets – such as cakes in the shapes of bees and various flavors of drinks – from bubble tea to coffees. 

    La Foret – 6848 Jubilee Ave, Burnaby, V5J 4B3 

    Workspace: ⅗ – although very spacey, it is a trendy space so it’s always quite busy. It’s not the best workspace as it’s quite loud, but if you don’t mind putting in headphones or if you can work in a loud space, then you’re all set.

    Prices: $$$ – quite pricey, but they have very unique food items (such as squid ink waffle, and tiramisu cake) and their plates are very filling!

    Laurence and Chico Cafe833 Bute St, Vancouver, V6E 3Y4 

    Workspace: ⅘ – It’s a very cool and bizarre place – you would think that you’ve stepped into a whole new world. Everything from the furniture to the drinks, it all brings an otherworldly vibe. It is quite busy, though, and to get good seating, you may have to make reservations. 

    Prices: $$ – medium pricing, a great place to grab coffee with a friend!

    Nature Parks

    Are you someone who’s into a good hike topped off with calm and relaxing scenery? Here are some great places to check out!

    This is a very calming stroll through the woods, and the park is pretty big so you can take a long hike. There’s a bright sunny field in the middle of the park, it’s great for basking in the sun or letting your pet run free.

    This is a super family-friendly place – a well-constructed hike in the forest with a lake in the middle! There used to be tons of little critters and animals in the forest, even today, you can glimpse tons of squirrels and chipmunks!

    great prices for how much food is served. for example, a big bowl of ramen is only around $6-7, which is insane as most ramen places are $10-20!

    Authentic and local places

    New West Riverside Market

    Individual shop owners such as jewelry, skincare, and gelato. Also, Angelina’s Dutch Corner (810 Quayside Drive Unit 122, V3M 6B9) is a great place to stop by for brunch! Their waffles and crepes are so delicious and filling.

    Cat cafe

    (2035-88 Pender St W International Village Mall, Vancouver V6B 6N9) – all the cats can be adopted, you can make a $10 reservation for one hour to play with the cats and purchase merch! I paid a visit there with my friend a while back, the cats were adorable and the building is very high up and open. I loved the experience!

    With school carnivals and fundraisers at the end of the year, there are great opportunities to support local grads and revisit fun childhood memories! Look out for posters around your neighborhood/coffee shops to see what events local schools are hosting.

Iconic magazine pages, a circle of followers, a glamorous lifestyle, and a glaring Instagram profile packed with glitzy party photographs tempt numerous young minds to pursue a career in the fashion industry. But beyond this glitziness, is the glamor industry of Guwahati smooth enough for a person seeking a career option here?

    “In Assam, the fashion industry did not win much attention a decade back or two, albeit it was in the course of progression. The ones who surpassed that phase to reach this industry were strong models who know their work and its value. But now, there’s a beauty pageant or a fashion show almost every alternate day. Everyone is a model. This, unfortunately, bemused the industry. People began questioning the credibility of the people of this industry,” retorted Medhi, a senior fashion curator.

    In another instance, an established model (anonymous) narrated, “The modeling ecosystem is turning faulty every day. Most newcomer models pay the organizers to walk the ramp and nobody seems to be complaining.”

    A career in modeling is observed as a selection of class, elegance, and excellence. Seemingly, people now looked down upon the same as a “clouded choice.”

    “When the supply increases, demand drops. Similar is the situation here in this industry. Without proper eligibility or grooming, anyone and everyone have become a model and a pageant organizer these days. There should be a proper forum or an association to look into these things and safeguard the respect and identity of the ones who have been working hard for ages to build a name or help the industry grow in the true sense of the term ,” added Stuti Choudhury, former Miss North East, anchor, and an actor.

    How does the payment aspect affect models’ growth

    Compared to the tier I cities like Delhi or Mumbai where an established model gets up to Rs. 60,000/- per show, the payment here is mediocre. And oftentimes, it becomes difficult for an aspiring model to depend only on shows and assignments for their daily bread.

     

    Whatsoever, Mr. Medhi further added that despite this imbalance, models who are confident, well groomed, and gained healthy knowledge about their profession are celebrating their career with apposite assignments and payments.

    It may not be much of an arduous task for models with a good academic graph and communication skill to place themselves. But for the inefficient and untrained ones, it is equally challenging as well as distressing to survive in this industry.

    Retaining the lost glory with appropriate measures

    The people representing this industry should carry out strict scrutiny and measures of its members and representatives. While the fashion industry is evolving with several new faces, original ideas, fresh paths, offering vivid horizons to the generations, it is equally important to set certain limitations and standards to retain its glory.

    Fashion and style exist in the DNA of northeastern people. However, people need to be practical, have knowledge about the profession and industry they are representing. If placed on the right track, this industry can create a revolution in India.
